Dear Customers,

It’s been quite a while since we have been able to send out a newsletter and we apologize. Unfortunately, our editor Susan Cottrell (in picture), suffered a bit of a mishap when she fell off her Harley, but is now recovered enough to be back at work.

We have exciting information to share with you about what we are doing to constantly improve our services.

Changes Ahead

In the courier business, adapting to change is a key element of success. We want to stay current with technology and trends so we can provide the best service possible to customers.

Our website is undergoing a much-needed facelift and we plan to launch our new look before the end of September 2012. The changes will make our services easier to use and provide a more prominent customer link to our Online Order Entry.

 

 

 

 

Driver Alert

You may have noticed our distinctive blue Thor’s Truck out and about on the roads in Baltimore/Washington, DC and beyond.

Runners’ drivers always try to be courteous and safe while driving. To ensure we continue with a good safety record, we now participate in the Driver’s Alert Program. All of our trucks proudly display the bright yellow signs on the back asking for compliments or concerns about our road safety.

Summer Dreams Chicken Salad

This is an easy make-ahead meal to do the night before you go to bed (if you have time, or think about it)!

INGREDIENTS:

  • Chicken Breasts (1 large or 2 small)
  • Celery
  • Mayonnaise
  • Sour Cream
  • Sriracha Sauce or Chili Sauce
  • Lemon Juice
  • Worcestershire Sauce
  • Cayenne Pepper
  • Soft Rolls
  • Lettuce

CHICKEN PREPARATION:
Poach the chicken breasts (with a little salt) until they are done, about 10 or 15 minutes. If the chicken breasts are particularly large, I usually halve them so they are thinner and cook faster. Refrigerate for later use, but if you are cooking them right before plan to eat them, cover and place in the freezer for about 5 minutes or so to chill them quickly.

Cut the cooked breasts into small bite-size pieces and put in a bowl large enough to add a few chopped vegetables.

VEGETABLES:
Cut (dice) about 1-1/2 stalks celery
Slice 3 scallions including the tops
Approximately 3/4 cup of cherry tomatoes cut in half

DRESSING:
1/4 cup mayonnaise
1/8 cup of sour cream
Approximately 1/8 cup of Sriracha Sauce or other chili sauce
1 TBLS of lemon juice
Dash of Worcestershire sauce
Dash of cayenne pepper (optional)*
Whisk gently to combine with chicken mixture

SERVING:
If time permits, allow to set in refrigerator for an hour or so as flavors will meld and taste even better, but it will be delicious immediately on a soft roll of choice and some crisp lettuce. Serve with some chips, pickle and a cold beer! Voila!

*You can make it less spicy by omitting the cayenne completely.
